PANDAN WAFFLES
These scrumptious pandan waffles are so expensive at the little cafes that we frequent. So we had to learn how to make them at home. And honestly, they are so easy to make and very very hard not to eat them all.
Here are a few tops when you try to make them at home:
invest in a larger waffle maker. We are using this small one that we have and it took so long to make these. Since we have a large family it took us a long time to make enough for everyone to try—also we have vultures who frequently scooped some when we’re not looking.
If you don’t want to use the artificial coloring, you can definitely use regular pandan. You’ll have to process it first in a blender to get the extract and you won’t get the vibrant green color you see in our video, but it will be tasty—nothing compares to the real flavor.
You may want to babysit your pandan waffles unless you have a high-tech waffle maker that has times and temp senors. Our little waffle maker is slow but when we walked away, it will keep cooking and luckily we haven’t had any pandan waffles burn, but it can happen.
If you have kids who are interested, have them help mix the batter. It’s fun, and they get to learn how to cook which can help to build their confidence (at least that’s what I think)!

INGREDIENTS
3 Cups – Tapioca Starch
1 Tsp – Salt
1 Tsp – Baking Powder
1 Cup – Cane Sugar
3 – Eggs
½ Cup – Milk
5 Tbsp – Oil
INSTRUCTIONS
1. In a bowl, thoroughly mix the eggs and sugar.
2. Add in the milk, oil, and coconut milk. Mix thoroughly.
3. Add the pandan extract and mix. Add more drops of pandan extract to taste.
4. In a separate bowl, mix the dry ingredients (tapioca flour, rice flour, salt, and baking powder).
5. Add the dry ingredients to the liquid pandan mix a cup at a time.
6. Add the shredded coconut and mix until combined.
7. Heat the waffle maker. Once ready, add the mix to the waffle maker. (NOTE: It may be necessary to follow the instructions of the waffle maker manufacturer).
8. Cook until golden brown and fully cooked through.
9. Serve warm. Optional: top with powdered sugar.
