SLIDER FLIGHTS - SOFTSHELL CRAB, PEPPER BOMB, AND SHRIMP & HERB
PEPPER BOMB SLIDER (1 of 3)
INGREDIENTS
2 LB - BEEF (we used 73% beef, rest fat)
1 Head - Lettuce
1 Whole - Tomato
1 Whole - Red Onion
1 Whole - Avocado
10-12 - Slider Buns
10-12 Slices - Cheese
4 Tbsp - Laab Seasoning
1 Tbsp - Black Pepper
2 Tsp - Salt (to taste)
1 Tbsp - Grated Garlic
3 Tbsp - Minced Lemongrass Stalks
4 Tbsp - Minced Thai Pepper
1/2 Cup - Chopped Cilantro
1/2 Cup - Chopped Green Onions
1 Cup - Chopped Tomato
1/2 Tbsp - Minced Garlic
INSTRUCTIONS
- In a large bowl, combine the ground beef, salt, black pepper, laab seasoning, grated garlic, and minced lemongrass. Form 3 inch patties/balls and set aside.
- Prepare the garnish and slice the tomatoes, lettuce, avocado, onions to desired size.
- To make the pepper bomb sauce, combine the minced garlic, chopped tomatos, green onions, Thai peppers, and cilantro. Add salt to taste.
- Once the grill is ready, cook the shrimp patties until fully cooked. We like to add the cheese on the patties while they are on the grill. For added flavor, butter the buns and chopped onions then cook it on the grill.
- Assemble your burger however you want. We used the beef patty, tomato, lettuce, cheddar cheese, sautéed onions, and topped with the pepper bomb sauce.
- Serve with a side of hot Cheetos for that extra fire.
SHRIMP & HERB SLIDER (2 of 3)
INGREDIENTS
4 LB - Uncooked Shrimp (No Shell)
2 - Egg Yolks
2 Tbsp - Grated Garlic
3/4 Cup - Bread Crumbs
2 Tbsp - White Pepper
1 tsp - Salt (to taste)
3 Tbsp - Oyster Sauce
2 Tbsp - Corn Starch
1 Bunch - Chives
1 Head - Lettuce
1 Whole - Tomato
1 Whole - Red Onion
1 Whole - Avocado
10-12 - Slider Buns
10-12 Slices - Cheese
(Optional) Cilantro Garlic Aioli:
2 Cloves - Garlic
1/2 - Lime Juice
1 Pinch - Salt (to taste)
1 - Egg Yolk
1 Bunch - Cilantro
1 Cup - Olive Oil
INSTRUCTIONS
- Chop the shrimp to desired consistency. The shrimp needs to be chopped fine enough to be able to form a patty without other ingredients. We like to leave in some manageable chunks of shrimp in the patty to add texture.
- In a bowl, combine the chopped shrimp, egg yolks, grated garlic, bread crumbs, white pepper, salt (to taste), oyster sauce, corn starch, and chives. Mix well then form 2-3 inch balls/patties.
- Once the grill is ready, cook the shrimp patties until fully cooked. We like to add the cheese on the patties while they are on the grill. For added flavor, butter the buns and chopped onions then cook it on the grill.
- Assemble the slider with the lettuce, tomato, shrimp patty, cheese, sautéed onions, and the cilantro garlic aioli.
- Serve with crunchy French fries.
SOFTSHELL CRAB SLIDER
6-8 Whole - Softshell Crabs
6-8 - Slider Buns
1 Whole - Tomato (Optional Garnish)
1 Head - Lettuce (Optional Garnish)
Dry Batter:
1 Cup - All Purpose Flour
2 Tbsp - Corn Starch
1/2 Tbsp - Old Bay Seasoning
1/2 Tbsp - Garlic Powder
1/2 Tbsp - Oregano
1/2 Tbsp - Paprika
1/2 Tbsp - Thyme
Wet batter:
2 Whole - Eggs
½ Tbsp - Onion Powder
½ Tbsp - Lemon Pepper
½ Tbsp - Paprika
1 Cup - Butter Milk
Steps
1. Crack 2 eggs into a medium bowl. Add onion powder, lemon pepper and paprika. Mix well.
2. Dry the crab with lint free paper towel and place into the mixture. Pour butter milk into the bowl to submerge the crabs. Set aside for 20 minutes.
3. In a separate bowl, add in all the dry ingredients and mix. Set aside.
4. Once the frying oil is hot enough, remove crab from the wet batter and place into flour seasoning mix. Cover the crab with the dry mix. Carefully place into the fryer.
5. Fry for 5-6 minutes or till cooked. Flip crab every 2 minutes for an even cook.
6. Assemble the burger. We used a sweet slider bun, lettuce, tomato, the soft-shell crab, topped with a chipotle mayo sauce.
7. Serve with chips.
